It all started in Naples. Brothers Tullio, Enzo, and Vallerio Rosano came to the United States with a dream of sharing their passion for the food of their region. Their culinary training started under the tutelage of their mother, Carmela, who still lives in Naples and makes frequent visits and contributions to Acquapazza’s kitchen.
Naples is a Mediterranean coastal city and the birthplace of pizza. Two of the restaurant’s specialties are traditional thin-crust pizza and fresh fish in the acquapazza (“crazy water”) style—a traditional preparation of Naples fishermen who, right on the boat, simmered their catch of the day with sun-ripened cherry tomatoes, parsley, garlic and a splash of Mediterranean sea water. Other authentic Rosano family recipes include Mamma Carmela’s homemade gnocchi and lasagna.
Acquapazza, a family owned and operated establishment, also offers a full bar featuring original cocktails with fresh local produce and liqueurs handcrafted by Tullio and his wife Renee, head bar chief. Housemade limoncello, cucumber canteloupe, watermelon mint, basil, and espresso cream are a few favorites.
